We’re in the process of getting our garden ready for the spring. The daffodils are poking out, our rhododendron survived the winter and I just started my seeds indoors for flowers. Oh, and Kristian did all of the weeding and the mulching. In other words, life is good. Until I forget to water. Then, life will be full of dead plants.
We’re going to grow vegetables again this year. I have two raised beds (4′ by 6′) to grow them in. The question is… what to grow? I know that I want a couple varieties of tomatoes. But, everything else is pretty much up for grabs. Usually, we just go to get plants and I say, “Oooh tasty! Oooh tasty! Ooooh tasty!” Until we have a lot of vegetable plants. Too many vegetable plants. Way too many vegetable plants. And then our tomatoes crowd out our brussels sprouts. And I feel guilty for mis-treating the eggplants.
I’m thinking that I need a list this year. 6-8 plants that we’ll get lots and lots of tasty, useable vegetables out of. I’m already planning on 2 tomatoes. So, that leaves us space for 4-6 other plants.
What would you grow?
mmm… snap peas!! some kind of beans. carrots. rhubarb. some kind of greens.
potatoes? broccoli? squash? i don’t know anything about vegetable gardens.. maybe you want to stagger when they ripen?
i’d love to grow raspberries but i guess they grow like weeds and take over your yard 🙂
Cucumbers? I don’t know how difficult they are, but I love them!
I find that tomatoes and peppers are the vegetables that I love best when grown in the garden. Supermarket varieties just don’t stand up to the fresh-from-the-garden kind. Summer squash is nice too. All of those are pretty easy to grow. (You’re making me jealous of your garden… I need to try to do some container gardening this year.)
Green beans, broccoli, carrots and pole lima beans. The first three choices because they’re my favorites. The lima beans would be in honor of Mom. She loved Jersey pole lima beans. I have a planter outside my door. I need to put in some herbs. Basil, rosemary, thyme this year, I think.
ooh, artichokes are my favs…but not sure how versatile they’ll be for you. I also like the idea of bell peppers…mmmmm.
Ooh vegetables! (But I also recommend some herbs – planting basil with tomato plants is especially good for both the tomato and the basil!)
You may have your list of veggies already in tact but I definitely recommend radishes and some form of pepper or bell pepper. I’m really excited for when it’s time to harvest the veggies – I’ve got some canning and preserving to do!

We used to grow basil, but we’d forget to pinch the tops off and it would flower and taste like soap. And then I’d feel like a failure and be sad. :p
Mary, I hadn’t even thought of lima beans. That’s an awesome idea!
We grew artichokes last year, but it took an awful lot of space up in our garden box for some awfully tiny looking artichokes. :p
