Hooray For Cupcakes!


I made some cherry vanilla cupcakes last night. I can’t get over how delicious they came out. I used this recipe. Many thanks to Slice of Pink for linking the cupcake blog.

The recipe was a bit complicated, but definitely worth the effort. You bake the cupcakes and let them cool. Then, you cut of the top and a small section of the middle. You fill up the hollowed bit with delicious cherry filling. Then you put the top back on. I’ve never scooped out the insides of a cupcake before, but I think that I did an ok job. Of course, anything looks better with pink frosting and a cherry on the top!

Kristian ran out at 11pm last night, because I was out of powdered sugar and I needed it for the frosting. Once again, he is my hero. I will make sure to reward him with cupcakes.

  1. Those look yummy! That would also make an awesome cake with the cherry filling. Does it take forever to take the cupcakes apart, fill, and put back together?
