Gluten-Free Cupcakes

Tomorrow, my Mom’s family is getting together to celebrate all of the recent birthdays in the family. I volunteered to make a cake. What can I say? I’ll take any excuse to lick raw egg-filled batter from a mixing bowl.

My Aunt was recently diagnosed with Celiacs, so I decided to make some gluten-free cupcakes to supplement the main cake. That way there will be something tasty for her to indulge in and I can use my cake carrier and one of my cupcake carriers. 

Yes, I own several plastic cases whose sole purpose in life is to convey baked goods from one place to another. I’m a baking nerd. Get over it.

The cake is still in an unfrosted state (I elevate procrastination to an art form), but the cupcakes are finished and ready to be eaten.

In fact, we ate several of them tonight.

The consensus was that they were actually quite tasty… but that they might have benefited from the inclusion of some gluten.

Shhh… don’t tell my Aunt.

At any rate, as long as the baked goods don’t end up looking like this, I think that we’ll be in good shape:

The Cake Is Now a Lie

Yes, that is the cake from my Grandfather’s birthday party. Or, well, what’s left of it. That particular cake is now referred to affectionately in our family as “the Floor Cake.” Honestly, I think that our waitress did us a huge favor by dropping our cake on the floor. It was all just empty calories anyways and we’ve already had hours of amusement telling floor cake jokes.

Plus, this sets me up to have provided the best birthday cake this year, so far.

Because it will be the only cake that didn’t end up mashed into carpet fibers and then thrown out like so much garbage.

Basically, as long as I don’t drop this cake or the cupcakes on the floor, my baking efforts will have been a rousing success.

Gotta love those lowered expectations.
